Salmon Patties

Spicy Southern-Style Salmon Patties

Ingredients:

  • 2 cans (14 ¾ oz each) wild-caught salmon, drained and bones removed
  • ½ cup diced onion
  • ½ cup diced bell pepper (red, green, or a mix)
  • 2 tbsp Big H Everything Seasoning (mild, hot or extreme heat)
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp all-purpose flour or breadcrumbs (for binding)
  • 2 large eggs (optional but helps with binding)
  • 1 cup oil for frying (vegetable or olive oil)

Instructions:

  1. Prep the Salmon:
  • Drain the canned salmon thoroughly.
  • Remove any skin or bones if desired.
  • Flake salmon into a large mixing bowl with a fork.

Mix the Patty Mixture:

  • Add diced onions and bell peppers to the salmon.
  • Sprinkle in Big H Everything Seasoning, black pepper, and garlic powder.
  • Add the flour or breadcrumbs and add eggs and mix.
  • Gently mix everything until well combined. Don’t overmix — you want some texture.

Form the Patties:

  • Shape the mixture into patties about ½ to ¾ inch thick. You should get about 6–8 patties depending on size.

Cook the Patties:

  • Heat oil in a large skillet over medium heat.
  • Once hot, place the patties in the skillet (don’t overcrowd).
  • Cook for about 3–4 minutes per side or until golden brown and crispy.

Serve:

  • Let the patties drain briefly on a paper towel.
  • Serve hot with a side of rice, salad, or creamy dipping sauce (like lemon aioli or spicy remoulade).

Roasted Garlic Butter

🧄✨ Roasty-Toasty Garlic Herb Butter Magic ✨🧈

Let’s whip up a buttery little spell! This compound butter is like a warm hug for your tastebuds—infused with sweet roasted garlic, fresh garden herbs, and a sprinkle of Big H’s mild magic. Perfect for slathering, sizzling, or sneaking straight off the spoon (we won’t tell 🐭).

🌿 What You’ll Need:

  • 4 sticks of unsalted butter (let them lounge at room temp 🧈)
  • 1 tbsp oven-roasted fresh garlic (the real star! 🌟)
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 2 tbsp Big H’s mild seasoning (because flavor = love 💛)

🪄 Let’s Make Some Butter Magic:

  1. Butter Prep Time:
    Place your butter in a big, comfy mixing bowl and let it relax until soft and spreadable—just like it’s on vacation.
  2. Garlic Spa Session:
    Preheat your oven to 350°F.
    Cut the tip off a bulb of fresh garlic (just a tiny trim ✂️), give it a tiny sprinkle of black pepper and a smooch of olive oil.
    Wrap it up like a cozy little garlic burrito in foil and bake on a cookie sheet for 20 minutes until golden and roasty.
  3. Mixy-Mixy Time:
    While your garlic cools off, toss the thyme, basil, parsley, and Big H’s seasoning into the softened butter. Stir it all together with love until everything’s snuggled in.
  4. Garlic Joins the Party:
    Once your roasted garlic has cooled down (no burnt fingers! 🔥), squeeze out the soft, golden cloves and mash them right into your herby butter mix. Stir, swirl, and make it creamy dreamy.

Fried Cabbage

🥓🔥 Fried Cabbage with Bacon & Sausage

Big Flavor. Bold Moves. Southern Soul.

If you've never met a cabbage dish that made you say "YUM," buckle up — this one’s about to change that. We’re talkin’ crispy bacon, smoky sausage, tender cabbage, and seasoning that brings the heat and the heart. It’s comfort food with a little kick and a whole lotta soul.

🛒 What You’ll Need:

  • 1 medium head of green cabbage, chopped like you mean it
  • 6 - 8 slices bacon, chopped (beef, pork, turkey or none at all)
  • 12 oz smoked sausage (I used chicken sausage, but you can use andouille or kielbasa), sliced into coins
  • ½ small onion, diced (I used yellow)
  • 1 green, 1 red and 1 yellow bell pepper (yes that’s a total of 3)
  • 2 tbsp chicken bouillon
  • 1 tbsp minced garlic
  • ½ tsp black pepper (or more if you’re bold)
  • 2 tbsp Big H’s Everything Seasoning (mild, hot, or extreme heat)

👨‍🍳 Let’s Cook This Magic:

Sizzle That Bacon:

  • Heat up a big ol’ skillet or Dutch oven.
  • Toss in your chopped bacon and let it get all golden and crispy. Try not to snack on it. 
  • Scoop it out and set it aside. Leave that glorious bacon grease right where it is — flavor lives there.

Brown That Sausage:

  • Drop those sausage coins into the pan and brown them on both sides until they’ve got some color and attitude.
  • Remove them and set aside with the bacon crew.
  1. Time to Sauté:
  • Throw your diced onion and bell peppers into the pan and let it sweat a bit — about 3 minutes.
  • Add in garlic and stir like you know what you're doing. Smells amazing, right?

Cabbage Party:

  • In goes the chopped cabbage. Pile it high — it’ll shrink down as it cooks.
  • Sprinkle in that black pepper, chicken bouillon and of course, Big H’s Everything Seasoning.
  • Stir it up and let the cabbage soak in all that goodness. Cover and cook for 10–12 minutes, stirring now and then. If it sticks, add a splash of oil(olive or avocado).

Bring It All Together:

  • Toss your bacon and sausage back into the pan like a reunion episode.
  • Give it a good stir, taste-test (chef’s privilege), and adjust the seasoning if needed.

Serve It Hot, Serve It Proud:

  • This dish is perfect solo, but also loves good company — cornbread.
